Healthy Bean and Macaroni Soup Recipe

Ingredients:

2 cans (16 oz each) great northern beans
1 Tbsp olive oil
1/2 lb fresh mushrooms, sliced
1 C onion, coarsely chopped
2 C carrots, sliced
1 C celery, coarsely chopped
1 clove garlic, minced
3 C tomatoes, fresh, peeled, cut up
(or 1 1/2 lb canned, whole, cut up)*
1 tsp dried sage
1 tsp dried thyme
1/2 tsp dried oregano
to taste black pepper, freshly ground
1 bay leaf, crumbled
4 C elbow macaroni, cooked

*If using canned tomatoes, sodium content will be higher. Try no salt added canned tomatoes to keep sodium lower.

Directions:

1. Drain beans and reserve liquid. Rinse beans.

2. Heat oil in 6-quart kettle. Add mushrooms, onion, carrots, celery, and garlic and sauté for 5 minutes.

3. Add tomatoes, sage, thyme, oregano, pepper, and bay leaf. Cover and cook over medium heat for 20 minutes.

4. Cook macaroni according to directions on package, using unsalted water. Drain when cooked. Do not overcook.

5. Combine reserved bean liquid with water to make 4 cups.

6. Add liquid, beans, and cooked macaroni to vegetable mixture.

7. Bring to boil. Cover and simmer until soup is thoroughly heated. Stir occasionally.

Potato salad-type recipes were introduced to America by European settlers, who again adapted traditional foods to local ingredients. Potato salad, as we know it today, became popular in the second half of the 19th century. Classic potato salad and coleslaw are the perfect side dishes at picnics and barbecues.

Basic Potato Salad Recipe

Potato salad has many different variations. Some are served warm or even hot, while others are served cold.  Typically served at BBQ’s and picnics, potato salad is a favourite to feed a large crowd due to it being easy to make in mass quantities and it being cost effective.

Ingredients:

2 pounds new potatoes
1/2 pound mushrooms
3 green onions
3 stalks celery
3 tablespoons vinegar
2 hard-boiled eggs
2 tablespoons Dijon mustard
1/4 cup mayonnaise
Salt, pepper

Directions:

1. Cover potatoes in pan with cold water and bring to boil over high heat.

2. Cook until potatoes are tender. Meanwhile, thinly slice mushrooms, onions and celery and combine in mixing bowl.

3. When potatoes are tender, drain and halve or quarter potatoes, depending on size and add to bowl.

4. Sprinkle with vinegar. Cover and refrigerate.

5. When cool, chop eggs and add to bowl.

6. Add mustard and mayonnaise, and season to taste with salt and pepper, mixing everything together gently.
