This is simply the simplest meal to prepare: toss all the essential ingredients in a pot, and keep it at a slow simmer all day. Thats when you come home from work to a delicious, fragrant, hot meal. And you didnt even have to slave over the stove, even though it may taste like a gourmet dinner. Although the crockpot does a great job with any meat, I think my favorite food to cook is chicken.

The flavors will soak into the chicken from the seasoning you use so it is a great start for any meal. Because Im so enthusiastic about poultry, my mother got me a book of crockpot chicken recipes that is filled with over 500 different variations on slow cooker chicken. I am especially fond of combining pineapple with chicken for a wonderful sweet and exotic flavor. Tonight Im making teriyaki chicken with pineapple citrus glaze. Yum! Technique:

Heat oil in a pan. Place onions and cook until soft. Let 10 minutes pass and then place garlic cloves and the roasted parsnips. Leave some of the parsnips to be added later.

Fry vegetables until they are soft for 10 to 15 minutes. Stir occasionally while adding the parsnips (should be pre-roasted).

Pour the chicken stock into the vegetable mix. Put in some black pepper and salt. Allow to simmer up to 20 minutes. Liquidize this after.

To enhance taste, add seasoning and orange juice.

This recipe serves 6 people as a starter, but you might choose to serve it as a meal in itself with freshly baked bread, in which case it serves four people easily.

CHUNKY EGG SALAD
serves 4

1/4 cup mayonnaise
1 Tablespoon cider vinegar
1 little spoon salt
1/4 cup minced onion
1/2 small spoon Worchestershire sauce or
1 small spoon of prepared mustard
1/4 teaspoon ground white pepper
6 hard-cooked eggs
1 cup thin sliced celery
2 Tablespoons minced green pepper or red or green hamburger relish
sliced tomatoes or whole a medium bowl, stir mayonnaise and next five ingredients till well mixed. Cut eggs into chunks or dice, as you like. Add eggs, celery, add green pepper or relish to mayonnaise mixture. Mix well. Cover and refrigerate till well chilled.

To Serve : Spoon mixture on tomato slices or into whole tomato. If using entire tomato, either cut off top and spoon out some of the middle, set on shredded lettuce and loosely fill with egg salad, or cut tomato into 8 wedges but don’t cut all the way down, so the tomato wedges will stay connected.

Garden Egg Salad Bowl
Makes four servings

6 tbsp. Mayonnaise
1 tsp. Prepared mustard
1/4 tsp. lemon pepper seasoning
1/8 tsp. salt
1/2 cup frozen peas, thawed
1/2 cup thinly sliced cauliflower
1/2 cup cut mushrooms
1/2 cup sliced celery
1/2 cup diced celery
1/2 cup quartered and sliced zucchini
2 tsp. Dried chives
3 hard boiled eggs, roughly chopped
Spinach leaves
Paprika
4 oz. cut julienne Swiss cheese
Tomato wedges
Pimiento-stuffed olives

In a medium bowl, stir together mayo, mustard, lemon-pepper seasoning and salt. Stir in peas, cauliflower, mushrooms, celery, zucchini and chives. Delicately mix in eggs.

Line salad bowls with spinach. Spoon in egg salad. Sprinkle with paprika. Garnish with Swiss cheese, tomato and olives.

Note : If desired, egg salad can be spooned into a tomato cup and placed on a bed of spinach.

The monastery’s chicken-soup recipe still is the best I have ever tasted! Spices like thyme, mint, or dill complement the wholesome chicken breast and stock and the fresh celery, onions, and carrots. Long grain white rice or egg noodles are put into the serving dish immediately before the meal, having been cooked earlier and set aside. No sogginess here! With slabs of homemade bread, cheese and some fresh fruit on the side, the meal is utterly simple and thoroughly satisfying.

At the monastery, I especially enjoy this meal after evening services. Watching the setting sun through the full length refectory windows, conversations are easy, touching on the work of the day, books we are reading, or welcoming new visitors. It always transports me to a peaceful place of inner tranquility to make this chicken soup at home with a similar meal. Isn’t it wonderful that both body and soul thrive on chicken soup? If you like your wings a little hotter you can sprinkle some red pepper flakes or other spicy seasoning on them after brushing them with the oil. Now that summer is here you can cook outdoors more often instead of slaving away in a hot kitchen. You can make a quick healthy inexpensive diner by firing up the barbeque and making some boneless skinless cubed grilled chicken on skewers with fresh garden vegetables like mushrooms, tomatoes, peppers and onions.

You can marinate the chicken and vegetables first in a zesty Italian salad dressing for seasoning. You can serve it on top of rice or pasta and have a fresh salad to go along with it. Baked potatoes are delcious made on the grill. You just clean them and cover with foil. If you prefer not to heat up an already hot day by using your oven, you can bake the potatoes for 30 mintues or so in the coals. Cooking time will vary based on the size of the potato. You can season the spuds with the dressing as well for a healthy alternative to butter and cream cheese.
